Hidden Carbs: The Sneaky Foods Stalling Your Keto Progress

Keto is one of several Macrovelo programs. This list is for people tracking net carbs tightly. If you are on a Mediterranean or balanced-deficit plan, carb "gotchas" matter less than overall pattern and calories — skip this article if it does not apply.

You've cut out bread, pasta, and sugar. You're eating meat, cheese, and vegetables. But the scale isn't moving, and you may not be in ketosis.

Often the culprit is hidden carbs. Food manufacturers put sugar and starches in products where you'd least expect them. Here are common sneaky foods that can stall a keto week.

1. Balsamic Vinegar

Olive oil and vinegar seems like the safest salad dressing choice. White or red wine vinegar is usually fine; balsamic is naturally sweet and often has added sugar. A single tablespoon can pack 3 to 5 grams of net carbs. A heavy pour can use a large share of a 20g day on a "healthy" salad.

2. "Sugar-Free" Products with Maltitol

Not all sugar-free labels are equal. Many low-carb bars and candies use maltitol. It is a sugar alcohol, but it can still raise blood sugar for some people. Look for erythritol, stevia, or monk fruit if you use sweeteners — and treat bars as optional, not a keto requirement.

3. Cashews and Pistachios

Nuts are generally keto-friendly, but carb counts vary. Pecans, macadamias, and almonds are usually easier to fit. Cashews and pistachios are denser in carbs. One ounce of cashews has about 8 grams of net carbs, and they are easy to overeat.

4. Deli Meats

Sliced turkey, ham, and roast beef look like pure protein, but many are glazed with honey, maple, or brown sugar. Check labels and ask for plain, oven-roasted varieties.

5. Medicine and Supplements

Cough syrups, gummy vitamins, and throat lozenges are often loaded with sugar. If you feel a cold coming on, look for pill forms or explicitly sugar-free options, and ask a pharmacist when you are unsure.

6. Onions and Garlic

Vegetables grown below ground generally have more carbs than leafy ones. Garlic and onions are fine in small amounts for flavor. Large portions (French onion soup, heavily caramelized onions) add up quickly.

Track with a plan, not a guess

The easiest way to avoid hidden carbs on keto is to follow meals that already have the math done. When keto is the program you chose, Macrovelo pre-calculates those meals and pairs them with workouts and logging for the same week — and you can swap dishes instead of starting over.
